Collection: Cold Appetizers

Hummus Singapore | Halal Cold Appetizers & Mezze at Zuzu Bussorah Street

Cold mezze is how a Turkish and Mediterranean table starts. Before the grills come out, before the pide lands, the table fills up with small bowls  hummus, baba ghanoush, muhammara, stuffed grape leaves and warm bread to pull through them. At Zuzu on Bussorah Street, that is exactly how we open every meal. Ten cold appetizers made fresh in our Muslim-owned kitchen, available for dine-in or islandwide online delivery.

Our Cold Appetizers and Mezze

Hummus — $13.52

The most-ordered cold starter at any Turkish or Lebanese table. Chickpeas blended smooth with tahini, fresh lemon, garlic and a drizzle of olive oil. Ours is made in-house and served with warm lavash bread. If you are ordering for the table, this is always the first thing to put down. Pairs well with everything that follows.

Mezza Platter — $37.52

The best way to cover the table without ordering ten dishes individually. The Mezza Platter brings together hummus, moutabbal, baba ghanoush, muhammara, cacik and dolma all served together with warm lavash bread. For groups of two to four, this is the practical opener before the grill mains or pide. The highest-rated dish on the menu, and the one most tables reorder.

Moutabbal — $13.52

Roasted eggplant blended with tahini, lemon and garlic. Richer and denser than baba ghanoush because of the tahini the texture is smooth and the smoke from the roasted eggplant comes through clearly. If you are deciding between moutabbal and baba ghanoush, order both. They are different enough to justify it.

Garlic Labneh — $15.12

Thick strained yogurt with garlic and olive oil. Labneh has a tang that hummus does not it cuts through the richness of the grilled dishes and works well as a cooling contrast. Good pulled through with bread or spooned alongside the kebabs when they arrive.

Muhammara — $14.32

Roasted red pepper and walnut dip. Slightly sweet from the peppers, nutty from the walnuts, with a warmth from cumin and mild chilli. Muhammara is the most distinctive dip on the table nothing else looks or tastes like it. Worth ordering even for guests who think they do not like dips.

Wara'a Enab — $13.52

Stuffed grape leaves filled with spiced rice and herbs, served cold. Bright from lemon, light enough to eat several without thinking about it. The Turkish and Lebanese kitchen has been making dolma this way for centuries the recipe has not needed to change.

Baba Ghanoush — $13.52

Fire-roasted eggplant with a lighter, smokier profile than moutabbal. Less tahini, more char the flavour is cleaner and the texture is slightly coarser. If you want the full range of eggplant preparations from the Eastern Mediterranean kitchen, order both moutabbal and baba ghanoush on the same table.

Cacik — $13.52

Strained yogurt with cucumber, garlic and dried mint. The Turkish version of what the rest of the world knows from Greek restaurants. Cooler and more refreshing than the other dips works well as a palette reset between the richer starters and the grill mains.

Saksuka — $13.52

Cold eggplant with tomato, peppers and olive oil. A Turkish kitchen staple. Less smooth than the blended dips the texture is chunkier, the flavour is more tomato-forward. Good for anyone who wants something a little different from the standard mezze lineup.

Ezme — $13.52

Finely chopped tomato, red pepper, onion and herbs with olive oil and a touch of chilli. Ezme sits between a dip and a salsa bright, fresh and sharp. Pairs well with the kebabs and wraps as a table condiment, but worth ordering as a starter in its own right.
