Mercimek Çorbası - Turkish Red Lentil Soup

The most-ordered soup in Turkish cuisine. Red lentils slow-cooked until smooth, finished with butter, dried mint and a touch of cumin. Naturally creamy without any dairy. Thick enough to fill you up as a starter, light enough to pair with anything on the grill menu or the cold mezze spread. Served with a wedge of fresh lemon squeeze it in just before eating. That is how it is done.
