The most theatrical dish on the Zuzu menu. Testi kebab is slow-cooked inside a sealed clay pot lamb or chicken with vegetables, spices and slow heat until the pot is brought to the table and broken open in front of the guests. The clay cooking intensifies the flavours and keeps everything inside impossibly tender. Served for two people. For anyone who wants to understand what traditional Turkish cooking actually does to meat, this is the dish. Book in advance for large groups or special occasions.

Ali Nazik — $27.92

Grilled lamb over a base of smoky eggplant puree blended with garlic yogurt. Ali Nazik comes from Gaziantep in southeastern Turkey one of the country's most important food cities and the combination of charred meat, smoky eggplant and cool yogurt is one of the best pairings in the Turkish kitchen. The eggplant puree is the centerpiece, not the garnish. Order this if you want to eat something that does not appear on most Turkish menus in Singapore.

Moussaka Lamb — $27.12

Layers of eggplant, lamb mince and tomato sauce, baked. Turkish moussaka is built differently from the Greek version lighter, less cream, the lamb and eggplant doing the work without a heavy béchamel. Hearty enough to be a full meal on its own, paired well with fresh bread from the bread menu.

Moussaka Chicken — $26.32

Lamb Shank — $27.92

A single lamb shank slow-braised until the meat pulls from the bone without effort. Served with rice. This is the kind of dish that requires time you cannot rush a lamb shank and the result is the proof of the patience. The collagen in the shank breaks down during the long cook and the braising liquid reduces to a deep, rich sauce. One of the most satisfying dishes on the menu for lamb eaters.

Okra Stew Lamb — $27.92

Lamb slow-cooked in a tomato-based stew with okra, garlic and spices. Known in Turkey as bamya one of the classic Turkish home-cooking dishes that rarely makes it onto restaurant menus in Singapore. Okra cooked this way loses its texture issues entirely: slow heat and acidity from the tomato breaks down the sliminess and what remains is tender, flavour-soaked pods in a deep lamb braise. For anyone who thinks they do not like okra, this is the version to try.

Fırın Köfte Lamb — $27.12

Lamb köfte (seasoned meatballs) baked in the oven fırın means oven with sliced peppers, tomatoes and a tomato sauce until everything caramelizes together. Oven-baking concentrates the sauce and gives the köfte a different character from charcoal-grilled versions. Less smoky, more deeply sauced. Iskender Kebab Lamb — $27.92

One of the most famous dishes in Turkish cuisine. Thinly sliced döner lamb laid over a bed of torn pide bread, covered with a rich tomato sauce and finished with hot browned butter poured tableside. Served with a side of cool yogurt. Iskender kebab was created in Bursa in the 19th century and has been a Turkish restaurant staple ever since.
